Liquid Yeasts - Fresh
We have been producing for over a century, on our own foundations cell phones (about 85 different strains from the Castelli and Polsinelli collections), high purity fresh liquid yeasts, definitely superior to the best buckets, since they are not subjected to stress
procedural, breakdown and rehydration and do not undergo long storage times, up to three years, which negatively affect cell viability. For do not talk about fraudulent bad storage or opening procedures containers (an old yeast or in the presence of oxygen leaks from the
50% to 80% of its cell viability).
Our liquid yeasts expire 90 days and are easy to use, with direct release into the must to be fermented. Each bottle of yeast contains 250 cc. of product equal to 1010 of live cells, which, introduced into the mass, if necessary in the case of large volumes of must, double independently every two hours, until reaching the quantity useful cell for fermentation.

We produce some of our more strains required, developed up to 109 in an agar substrate, for large and medium cellars, in sterile containers with a vitality of 6 months.
Dry yeasts - Dry Yeasts
We have a selection of some of our most famous and safe and total fermentation yeasts, more used and tested over time. Packaged in the absence of oxygen in packs of 500gr and in opaque glass bottles for the fermentation of 5 and 10 quintals of grapes. Finally, we have yeast sachets, produced in a protected atmosphere, for small producers for the fermentation of 1q.le of grapes.
